And what better way to celebrate the cozy joys of autumn than with a warm and nourishing Fall Grain Bowl? Join us as we share this delightful recipe that encapsulates the essence of the season – warmth, comfort, and togetherness.
Ingredients:
For the Grain Bowl:
1 cup of cooked quinoa or your preferred whole grain (farro, brown rice, or barley, for example)
2 cups of mixed roasted fall vegetables (we love butternut squash, sweet potatoes, and brussels sprouts)
1 cup of cooked and shredded chicken (or tofu for a vegetarian option)
1/2 cup of toasted nuts (walnuts or pecans)
1/4 cup of dried cranberries or pomegranate seeds for a sweet-tart burst
1/4 cup of crumbled goat cheese or feta (optional)
Fresh herbs for garnish (sage, rosemary, or thyme work wonderfully)
For the Dressing:
1/4 cup of olive oil
2 tablespoons of balsamic vinegar
1 tablespoon of maple syrup
1 teaspoon of Dijon mustard
Salt and pepper to taste
Instructions:
1. Roast the Fall Vegetables:
Preheat your oven to 400°F (200°C).
Toss your chosen fall vegetables with a drizzle of olive oil, salt, and pepper.
Roast them for about 25-30 minutes until they become tender and beautifully caramelized.
2. Prepare the Dressing:
In a small jar, combine the olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper.
Give it a good shake until everything is beautifully blended. Set it aside.
3. Assemble the Grain Bowl:
Start with a generous scoop of your cooked grain at the base of your bowl.
Layer on the roasted fall vegetables, shredded chicken (or tofu), and the toasted nuts.
Sprinkle those dried cranberries or pomegranate seeds for that delightful pop of color and flavor.
For an added touch, you can include crumbled goat cheese or feta for creaminess and tang.
Now, the pièce de résistance – generously drizzle the dressing all over your creation.
4. Garnish and Serve:
Complete your warm grain bowl with fresh herbs like sage, rosemary, or thyme.
Cozy up in your favorite nook, wrap yourself in the warmth of home, and relish every spoonful of this autumn masterpiece.
