- 2 pounds of butternut squash, peeled and diced

- 1 medium-sized onion, chopped

- 2 carrots, peeled and chopped

- 2 cloves of garlic, minced

- 4 cups of vegetable broth

- 1 teaspoon of ground cinnamon

- 1/2 teaspoon of ground nutmeg

- Salt and pepper to taste

- 2 tablespoons of olive oil

- 1/2 cup of heavy cream (optional)

- Fresh sage leaves for garnish (optional)




1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes, until they become soft and translucent.
